Vickie's Story

I had an aunt that I spent a lot of time with growing up. She lived down the street from the intercoastal waterway in Wilmington NC. We were always doing fun things together. I always say "Aunt Margaret was Martha Stewart before Martha Stewart was Martha Stewart!" We used to go fishing, crabbing, clamming, and foraging in the woods for Christmas greenery, crafts, candy making and baking. We stayed very close until the day she died, I miss her so much. Every Christmas she would make a black walnut cake. It is basically a cream cheese pound cake with black walnuts, so good! When she passed away I took over making the black walnut cake at Christmas. Because it doesn't have a bunch of gooey frosting on it, my nephews used to poo-poo it when they were young. Now they beg me to make it. This may be tmi but maybe there is a nugget for you.


Recipe

Ingredients

2 cups of Butter (softened)
8 oz cream cheese (softened)
3 cups sugar
6 Large eggs
3 cups cake flour
2 tbsp Vanilla extract
2 cups Black walnuts mixed with 2 tbsp of flour

Instructions

Whip butter and cream cheese together in a large mixing bowl. Gradually add sugar and beat thoroughly until dissolved. Add eggs one at a time until well mixed. Blend in flour gradually, then add vanilla and black walnuts. Grease and flour bundt pan or tube pan. Spoon batter into prepared pan and bake at 325 degrees F for one hour to one hour and fifteen minutes. Let cool in pan for 10 minutes, then invert on plate. Serve warm or cool.
